Bitter Asafoetida

Bitter Asafoetida is oleo-gum-resin obtained from incised mature rhizomes and root crowns of Ferula narthex Boiss. of Apiaceae. It originates from high-altitude arid lands of Afghanistan, northern Pakistan and Kashmir and is defined as bitter-grade asafoetida in classical South Asian materia medica. This tall perennial herb requires long growth cycle before harvesting milky latex which hardens upon air-drying. Compared with common commercial asafoetida, it features stronger bitter taste, higher content of sulfur compounds and sesquiterpene coumarins. Widely used in Ayurvedic and Unani formulations for anti-flatulent, anthelmintic and antispasmodic purposes, it is rarely applied in culinary seasoning. It is seldom adopted in mainstream perfumery today and mainly traded as botanical extract raw material.
